I have never, ever seen a thermometer in any cooking stuff, not to mention the boiling caramel. Wow. I’m impressed - you indeed are a thorough cook!

As much as I cook - and as much as I love the sweeter end of the cooking spectrum - candy making intimidates the crap out of me. Far as I’ve gone is fudge.
